The Pastele Shop was opened by Elisabeth Ross. Elisabeth was a young girl living on Maui on the Sugarcane Plantation to which she was born--she lived in the Hawaiian housing, and next to their housing was the Puerto Rican immigrant housing. Lured there by the appealing smells of their Puerto Rican dishes, she was met with kindness from the Puerto Rican women and was taught their food.

Learning their delicious food inspired Elisabeth to open her own restaurant to serve the Puerto Rican food she so much loved to the people of Hawai'i. She left quiet Maui for a more bustling life in the capital on O'ahu, and it was there, in the August of 1981, where Elisabeth opened The Pastele Shop in Honolulu, and fulfilled her dream of serving Hawai'i her favorite Puerto Rican food.

Elisabeth Ross' dream of providing good food and pasteles for Hawai'i is carried on by her daughters, grandchildren, and great-grandchildren.
